A crumble for a slower afternoon

Use a mix of tart and sweet apples if you have them. Granny Smith apples hold their shape, while a sweeter apple such as Pink Lady brings balance. Cut the slices evenly so the fruit softens at the same pace.

You'll need: A 9-inch square baking dish, two mixing bowls, and a knife

  1. Heat the oven to 375°F (190°C). Lightly butter a 9-inch square baking dish.
  2. Toss the apple slices with the lemon juice, the sugar for the apples, cinnamon, and cornstarch. Tip into the baking dish and spread in an even layer.
  3. In another bowl, mix the oats, flour, topping sugar, and salt. Rub the cold butter into the dry ingredients with your fingertips until you have a mixture of small crumbs and pea-sized clumps.
  4. Scatter the topping loosely over the apples. Bake for 40–45 minutes, until the topping is golden, the filling bubbles at the edges, and a knife slides easily into the apples. If the topping browns too quickly, cover loosely with foil.
  5. Let stand for 15 minutes before serving. Spoon into bowls and add vanilla ice cream if you like.
